They are very firm and may have odd twists or crinkles leading to a tapered tip.

They are used extensively in stir fry because the pepper maintains its firmness throughout the cooking process.

This pepper is moderately high on the heat scale with a robust flavor that is not as sweet as a Thai chile but delivers the same kick.

Choose bright, glossy peppers that are firm and thick. Avoid peppers with soft spots.

Refrigerate, unwashed in a plastic bag for up to 7 days.
